1. Frozen Strawberry Skinnygirl Margarita

Ingredients:

- 4.5 ounces Skinnygirl Ready-to-Drink Margarita
- Handful of strawberries (or fruit of your choice)
- 1 cup of ice

Directions:
Combine all ingredients in a blender (I use my Skinnygirl Bella Personal Blender). Pulse until fully blended and pour into a glass. Garnish with a lime wheel on the rim.

2. Spicy Sirloin Steak Fajitas

Ingredients:

- 2 pounds of grass-fed top sirloin

- 2 tbsp roughly chopped cilantro

- 2 tbsp of lime juice and lime wedges

- 4 cloves of garlic

- 1 tbsp Asian chili paste

- 2 tbsp Worcesterchire sauce

3. Midwestern Chilli-Stuffed Baked Potatoes

Chili:

- 9 dried red California or New Mexico chiles, stems and seeds removed

- 8 garlic cloves, peeled

- 4 cups beef broth

- 2 tablespoons canola oil

- 2 pounds 85% lean ground beef

- 2 1/2 teaspoons ground cumin

- 1 1/2 teaspoons freshly ground black pepper

- 1/2 teaspoon cayenne pepper (optional)*

- 2 white onions, finely diced

- 1 1/2 cups canned crushed tomatoes

- 1 tablespoon white wine vinegar

- 1 1/2 cups canned red kidney beans, drained and rinsed

Potatoes:

- 2 cups (about) kosher salt

- 8 medium russet potatoes, scrubbed

- 1 tablespoon canola oil

4. Cinco de Mayo Margarita Jello Shots

- 1 cup Orange Juice
- 2 packets Non-Flavored Gelatin
- 3/4 cup Tequila
- 1/4 cup Triple Sec
- 6 Limes
- Lime Juice(for garnish)
- Sea Salt

Heat up 1 cup Orange Juice and 2 packs Gelatin in a pot, then set aside to cool. While mixture cools, cut limes in half and hollow out completely, then place in a muffin pan to limit movement.

Combine liquor mixture separately, then stir into the cooled gelatin mix.

Pour mixture into hollowed limes and let it set in the fridge until it hardens.

Once the jello is set, cut limes long-ways with a sharp knife. Lightly dip one side of each slice into lime juice, then lightly dab into sea salt.

5. Strawberry Margarita Cupcakes

For your cupcakes, preheat the oven to 350°F.

Mix all ingredients in a large mixing bowl for 2 minutes until thoroughly blended. Place cupcake liners into cupcake pan and fill each cup ¾ full with cake mixture. Bake for 18 mins. Cool completely on a wire rack.

For your frosting, mix the egg whites and sugar in a standing mixer on high for 7-15 minutes, until stiff peaks form.

Turn the mixer to a low speed and add in the butter, strawberry preserves, lime juice, tequila, and food coloring. This will turn the frosting somewhat soupy and separated, but it will come back together after mixing again.

Turn the mixer back up to high and mix for another 3-8 minutes, until icing is fluffy and somewhat stiff. If you're still having trouble, try putting it in the fridge for 10 mins and then mixing again.

Frost the cupcakes with a large round tip and sprinkle with granulated sugar. Garnish with a slice of lime and a sprinkle of zest. For a little extra kick, you can sprinkle on some sea salt.
