These tart recipe ideas are good all-year round, but since Spring is coming up, it’s just the best time of the year for picnics, and what better way to have a great picnic than having a tray full of tarts?

None! Because eating tarts on a wonderful sunny day will just brighten your day more. So without further ado, let’s explore the different kinds of tart recipes by the lovely Sarah Carey.


Black Bottom Cupcakes:

For the cupcakes, you need 6 tablespoons Dutch-process cocoa powder, 6 tablespoons hot water, 1 1/2 cups all-purpose flour, 3/4 teaspoon coarse salt, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 12 tablespoons (1 1/2 sticks) unsalted butter, 1 cup plus 2 tablespoons sugar, 1 large egg, room temperature, 1/2 cup sour cream, room temperature, and 1 teaspoon pure vanilla extract.

For the Cream Cheese filling, you need 1 pound cream cheese, room temperature, 1/2 cup sour cream, room temperature, 1/2 cup sugar, 2 large eggs, room temperature, 1 teaspoon pure vanilla extract, and a pinch of coarse salt.


Chocolate Caramel Tarts:

For the chocolate tart dough, you need 8 tablespoons (1 stick) unsalted butter, room temperature, 1/2 cup plus 1 tablespoon confectioners' sugar, 1 large egg yolk, 3/4 teaspoon pure vanilla extract, 1 1/4 cups all-purpose flour, plus more for rolling, and 1/4 cup unsweetened Dutch-process cocoa powder.

For the caramel filling, you need 1/2 cup water, 2 cups granulated sugar, 1/4 cup light corn syrup, 8 tablespoons (1 stick) unsalted butter, 1/2 cup heavy cream, 2 tablespoons creme fraiche, and a pinch of coarse salt.

For the chocolate ganache glaze, 1/2 cup heavy cream, and 3 1/2 ounces extra-bittersweet chocolate, finely chopped.


Lemon Mousse Damask Tart:

For the crust, you need 1/2 Pate Sucree Extra

For the filling, 1 1/4 teaspoon unflavored gelatin, 2 tablespoons cold water, 1/4 cup freshly squeezed lemon juice, 1/2 cup heavy cream, 4 egg whites, 1/2 cup sugar, and grated rind of 1/2 lemon.

For the candied lemon peel garnish, 1 lemon, 1/2 cup water, and 1 cup sugar.
